Why are we always astonished when summer sweeps us off our feet? The promises of spring are coming to fruition in our gardens and farms.
Picknics and parties, summer mornings and long evenings...the sounds of children reveling in the freedom from school. We do love it.
But what to do with all this bounty? Zucchini is always the bad guy and yet we keep planting it! I'm partial to corn fritters this summer and am happy to share this recipe adapted from Deborah Madison's classic The Greens Cookbook. I like these with green sauce, but maple syrup is good too! Quick and delicious...and be sure to freeze some corn kernels and blueberries for the quieter months to come.
