Whenever I print out the mail orders we receive I am impressed by the diversity of our fans. From Hawaii to Vancouver, Palm Beach to Wisconsin and all the places in between. So many cultures are reflected in the names we see and it delights me. A week ago the clouds parted and the sun shone brightly on the Inauguration of our president and the return of truth and civility. It's been a long four years but we never gave up on our country in all it's diverse glory. Here at BOLA granola we are devoted to giving you the best nutrition and taste we can offer but sometimes I just want a cookie. This is my celebration cookie and I hope it will be yours too! I started these at 5:30 am and pulled them out of the oven at 6:45….
Shortbread Cookies
Preheat the oven to 375F Cut 1# butter into cubes to warm. Sift 4c flour and set aside. Beat the butter until soft and beat in 1c. sugar (I used ½ demerara this time) until combined. Beat in one egg, scraping down the side of the mixing bowl to make sure it's well blended Mix in the flour one cup at a time. This is a bit of a challenge even in a Kitchen-Aid. Scrape down the bowl and turn out onto a sheet of saran. Wrap it and flatten with a rolling pin. Pop it into the freezer while you load the dishwasher and make coffee. Cut the dough in half and roll out a quarter inch thick. My cookie cutter made 15 first round cookies and I put the scrap back in the freezer for another time. Bake 15 minutes until the edges are browned. Less if you like a paler cookie. Go to work!
