There's Only One BOLA!

In the rush of the seasons or the headlines of the day, change is a constant, visible or hidden. For decades now I've been fortunate to come to this spot for a refresh. Over the course of many years the changes to this edge of our world are stark reminders. Houses have fallen into the sea and only rusted pipes and bits of concrete mark their passing.
The ocean seems as robust as ever but we know that balances within it have shifted. Here at BOLA granola we are always adapting too. Better systems and skills, new team members, and all the chaos of the recent pandemic have brought change. One thing that hasn't changed is BOLA granola. We are still committed to turning out our favorite granola in small batches....and I love my job in quality control. Every morning I enjoy BOLA granola! When I'm at the shore I am particularly eager to make this simple soup with the catch of the day. Try it and be refreshed!
Simple Soup
I use 4-6oz of fresh cod and 6-8 littleneck clams per serving. I sometimes add fresh mussels to the mix but for a deeper flavor I stir in smoked mussels or scallops at the end. I also steam small red potatoes in advance. For a garnish use chopped parsley or cilantro.
Scrub the clams and cut the fish into serving pieces.
Prepare 2 stainless skillets with 1/2 bottle of dry vermouth or white wine, several bay leaves and sprigs of thyme, some thin sliced onion and several cloves of crushed garlic. Bring to a simmer and poach the fish until just cooked and remove from pan. Meanwhile steam the clams (and mussels) open and remove from cooking liquid. Strain the clam broth into the fish broth and stir in enough good heavy cream (1/4c /serving). You could substitute canned tomatoes and basil if cream is not your thing). Bring to the simmer. Add smoked shellfish here to warm them.
Meanwhile lay the cod and shellfish into bowls (potatoes too) and pour the cream mixture over all. Sprinkle with garnish and serve.
