Summer Peaches, Plums & Cherries
Full Moon Again…
This time it’s a Full Buck Moon and a Supermoon as well…timed to be obscured by stormy weather…oh well. Meanwhile we are reminded of the universe beyond our imagining by the pictures of the Webb telescope… while here on earth we indulge in the fruits of summer. Peaches and plums are being picked, the strawberries are past but blueberries are trending and oh my! the cherries. It’s hard to improve on fresh fruit but for a “fancy” dessert this is a quick and easy pastry to pair with custard, lemon curd or just freshly whipped cream and topped with fresh fruit of your choice.
Crème Pastry
Combine 2 cups sifted all-purpose flour with 1/2t of Kosher salt. Cut in ½ # of butter as for pie crust and combine with 1/2c of sour cream or yogurt. This will be a wet dough so let it firm up for an hour wrapped in saran or waxed paper. Divide into 10 little balls and roll each out into 9”x 6” rectangles. Cut further into smaller rectangles or triangles and chill before baking. Smaller pieces will make individual servings easier as the pastry will be hard to cut through once baked. Prick all over with tines of a fork and sprinkle with sugar. Bake 7 minutes in a 425F oven. The rest is up to you.
Overnight Oats: Mix together in a glass jar with a tight lid.
- 1/2 cup rolled oats
- 1/2 cup milk, dairy or dairy-free
- 1/4 cup Greek yogurt, or dairy-free yogurt
- 1 tablespoon chia seeds
- 1 tablespoon maple syrup
- A pinch of salt.
