It’s still a shock to come downstairs in the morning to see the zero reading on the outdoor thermometer, but the sun is strong and the equinox upon us. I feel like baking… Making banana bread always seemed like punishment to me. I would have preferred to make cherry pies but my mother needed to use up those squishy brown bananas. Banana Bread for me? No thanks. But now I’ve found a new way to make Banana Bread and I like it! Adapted from Delish. Thanks Carmen! Because what else are we going to do until spring? Try it and see….
Preheat the oven to 375F and prepare a tube pan. Sift together and set aside: 1c flour 1t. baking soda 1/4t salt Beat together until light: 1/2c butter 3/4c sugar Scrape down the bowl and beat in: 1 egg and 1 yolk When thoroughly mixed add: 1/4c yogurt 3 bananas, pureed 1/2t ea. vanilla and almond extracts Meanwhile blend together: 4oz cream cheese with 1 egg and 2T ea. sugar and flour Pour 2/3 of the banana batter into the tube pan, sprinkle on 1/4c BOLA granola and run a spoon through the middle to create a trench. Spoon in the cheese mix and finally top with the remaining batter. Smooth and sprinkle with 2 T BOLA granola and bake for 40 minutes. When cool, slice thick and toast on a buttered griddle. Serve with frozen yogurt and sprinkle with BOLA granola. Maple syrup is optional. Did someone say Spring?
